Tori Bailey's Bailey's Irish Cr'eme Cake

Tori Bailey and I have been friends for a number of years. In addition to our working together as 911 operators we share a love of cooking and entertaining. Tori is also a talented writer and has her first book coming out in the spring. Her book entitled "Coming Home" is set in Athens, Georgia, and is the story of love, loss and realizing that you CAN go home. Check out her site readtoribailey.com for more information.

One of Tori's signature dishes is her famous Bailey's Irish Creme Cake. I have been fortunate to have had this recipe for several years. I think you will enjoy it. Now if I could just get her husband's killer punch recipe......



Bailey's Irish Creme Cake

1 Box Duncan Hnes Devil's Food Cake Mix
1 cup buttermilk
1/2 cup butter
3 large eggs
1/3 cup Bailey's Irish Greme

Preheat oven to 350 degrees

Mix together cake mix, Bailey's Irish Creme, butter, eggs and buttermilk at low speed until moistened. Then beat at medium speed for 2 minutes.

Baking Instructions:
Bundt pan... 45 to 50 minutes
8 inch pan ... 35 to 38 minutes
9 inch pan ... 30 to 33 minutes

Icing for bundt cake.....Use a jar of fudge ice cream topping. Heat according to directions on jar and spread on cake.

Icing for layer cake.....
1 package cream cheese room tempature
1box powdered sugar
1 teaspoon vanilla
1 teaspoon cocoa powder
Combine ingredients and beat until creamy.

One of my favorite things about this time of the year is getting into the kitchen and baking. Each year I say I am not going to do a lot of baking. Then I find myself reading my favorite receipe books. My resolve to not over do it in the kitchen gives way to wanting to create treats to share with those I love. Tori’s Irish Cream Cake

½ Cup boiling water
1 bar (4 ounces) sweet cooking chocolate
2 Cups Sugar
1 Cup butter softened
4 egg yolks (save the whites)
1 teaspoon vanilla
2 ½ Cup cake flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
4 egg whites stiffly beaten
½ cup Bailey’s Irish Cream


Heat oven 350 degrees. Line bottoms of pans with waxed paper. Grease side of pans
Prep:
Pour boiling water over chocolate in small bowl, stirring until chocolate is melted. Set aside to cool. Stir in vanilla.
Beat egg whites until stiff – put in a chilled bowl and set aside in a cool area.
Mix:
Flour, baking soda and salt together in a bowl. Set aside
Combine buttermilk and Irish Cream in a cup. Set aside
Using a 2 ½ quart bowl beat sugar and margarine until light and fluffy. Beat in egg yolk one at a time. Beat in chocolate and vanilla on low speed.
Add to mixture at low speed alternating between the flour mixture and cup with buttermilk with Irish Cream. Allow mixture to become smooth before adding each of the two until complete. Fold in egg whites. Divide batter among pans.
Cook Time:
8 – inch round pans : 35 to 40 minutes
9 – inch round pans: 30 to 35 minutes
8 – inch square pans: 45 to 50 minutes
9 – inch square pans: 40 to 45 minutes
Or until a wooden pick inserted in center comes out clean. Allow cake to cool before icing.
Icing for Bailey’s Irish Cream Cake:
1 tablespoon cocoa
2 Tablespoons Irish Cream
2 2/3 cups powdered sugar
2/3 cup butter softened
1 teaspoon vanilla

Mix cocoa and Irish Cream until cocoa is dissolved
Beat Irish cream mixture, powdered sugar, butter and vanilla on medium speed until smooth.

The Best Cookie You Will Ever Have........

I was blessed to grow up in a small town in north Georgia. About two thirds of the people I graduated with had started first grade together. We were a small, tight knit community and every opportunity we had to get together outside of school made us grow closer. One of my dearest friends was Sally. Red hair and freckles, Sally was smart, funny and athletic. Sally's parents always made us feel welcomed into their home. Mr P. would often come home to find his den had been taken over by a bunch of giggling girls. He would just laugh and find his newspaper and go upstairs to read it in peace and quiet. Mrs. P would always have teacakes made for us. Every function that required bringing refreshments Sally would volunteer her mother to make teacakes. If Sally was not there for some reason the rest of us would volunteer her mother. This is the best cookie I have ever had. When I grew up and got the recipe I felt as if I had found the Holy Grail. I still use the copy of the recipe written in my mother's hand with the special instructions for me as a new cook. The paper is tattered and by now I know the recipe by heart, but I will continue to keep it because I reminds me of two wonderful women. This cookie has become a favorite of my children and is often requested when they have to take refreshments to an event.

Mrs P's Teacakes

2 sticks Parkay margarine melted
2 eggs
11/2 cup sugar
2 teaspoons canilla
2 cups self rising flour
1 cup plain flour
1 teaspoon baking powder.

Mix ingredients with a wooden spoon. Sprinkle a small amount of flour on your work surface and roll the dough to desired thickness and cut out cookies. Bake at 400* for 8-10 minutes.

The key to this recipe is to use Parkay and mix with a wooden spoon instead of a mixer. This is an excellent dough for cut out shapes. The cookies also freeze well after baking.

My sincere thanks to Mrs P for the thousands of cookies she made for us through the years and for always welcoming us into her home. The world would be much better if we had more like her.

Watergate Salad and Upcoming Publix BOGO

Hopefully Barry will be able to come from the hospital tomorrow so today I am making Watergate salad. It is one of his favorites and will be someting he will enjoy this week while at home.

Watergate Salad

1 can (20 oz) crushed pineapple, in juice, undrained
1 pkg. (3.4oz) Jello Pistachio Flavor Instant Pudding
11/2 cup thawed Cool Whip Whipped Topping
1 cup mini marshmallows
1/2 cup chopped pecans

Combine ingredients and refrigerate for at least one hour before serving.

Fall has arrived !

Today is October 1st, the beginning of  fall festivals, holiday cooking, shopping and decorating. In many ways it is my favorite time of year.  Today is also my husband's birthday. We are both at that stage of life where we don't really celebrate birthdays anymore.  I think we may need to change that.  As we get older we need to actually celebrate that we have had another year.  We never know wen we will have our last birthday. So for Barry's birthday today I made him an Apple Dapple cake. It reminds me of fall and is especially delicious when you get a slice while it is still warm. Here is the recipe:

Apple Dapple Cake

1 1/2 c. cooking oil
2 c. sugar
3 eggs
Cream together and add:
2 cups self rising flour
1 tsp cinnamon
Next add:
3 c. chopped apples
1 c. chopped pecans
1 tsp vanilla

Cook in a bundt cake pan for 1 hour at 325*

In a sauce pan add the following:
1 c brown sugar
1/2 stick of butter
1/2 c. milk

Bring to a boil and cook for 5 minutes. Pour over hot cake.

Where did summer go?

Today was cool instead of the scorching heat we have been having in the Atlanta area.  With the coming cooler weather I am in the mood to bake more.
